Coconut Pumpkin Pie
3/4 C sugar
1/2 tsp salt
1 1/2 tsp pumpkin pie spice
2 large eggs
1 can pumpkin
1 1/2 C coconut milk
1 tsp vanilla
1 graham cracker pie crust
Preheat oven to 350 degrees F. Whisk together sugar, salt, pumpkin pie spice in a small bowl. In a large bowl, beat eggs, then add pumpkin and spice/sugar mix. Stir in coconut milk and vanilla until well combined. Pour into crust. Bake 55-65 minutes, or until a knife stuck in the center comes out clean.

Curried Red Lentil Soup
1 tbsp olive oil
1 onion, chopped
3 garlic cloves, crushed
3 carrots, cut into rounds
2 celery stalks, chopped
2 tbsp curry powder
pinch of ground cloves
1 cup red lentils
4 cups vegetable broth
Salt, to taste
1/4 cup fresh chopped cilantro
1 lemon
Heat oil in a pot, add onion and garlic and saute until soft. Add carrots, celery, curry powder, cloves and lentils and saute a few minutes more. Add broth and salt and stir, then bring to a boil. Cover, leaving lid slightly ajar and reduce heat to low. Simmer 45 minutes or until lentils are completely soft. Serve with a squeeze of fresh lemon juice and freshly chopped cilantro leaves.

Coconut Milk does a body good!
OH MY! Coconut milk, particularly the Coconut Milk Beverage by Turtle Mountain, is simple the creamiest, most delicious beverage out there. Non dairy, and rich in medium chain fatty acids, this milk is also good for you. A little pricey, but worth it. Here is a delicious smoothie recipe.
Strawberry-Mango Coconut smoothie
1 cup fresh organic strawberries, greens removed
1/2 cup frozen mango
1 - 2 cups coconut milk (I like the Turtle Mountain kind)
a few spinach leaves
1/8 tsp powdered multidophilus
Blend until smooth and serve in a chilled glass. Garnish with mint leaves, if desired.

Broccoli and dairy-free ranch dressing
Brown rice cakes with almond butter and raisins (for little ones make a smiley face w/raisins)
PB and banana mini tea sandwiches
Home made granola bars (stay tuned for recipe!)
Air popped popcorn drizzled with melted Earth Balance
Smoothies (stay tuned for recipes!)
And one for Mommy:

Lentil Burgers
1/2 cup wheat germ
2 cups cooked or canned lentils
1 cup bread crumbs
1/4 cup chopped onions
1/4 cup chopped green bell pepper
3 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1-2 eggs
Stir together and form into patties. Fry on lightly oild frying pan on medium/high heat, 5-10 mins, flipping occassionally. Serve like you would a regular hamburger, on a bun w/fixings. Or, we like to eat them sans bun, atop a pile of fresh field greens with light dressing.

Matzah Pizza for Two
My preschooler loves to help me make this.
2 matzahs
1/2 cup tomato sauce
1/2 cup chopped spinach
1/2 cup chopped broccoli
1/2 cup chopped zucchini
1/4 cup chopped fresh basil
1/3 cup shredded cheese (we use Veggie Shreds)
Preheat oven to 400F. Spread tomato sauce onto matzahs. Sprinkle toppings and cheese and bake about 12 mins. YUMMY! And it gets the wee ones to happily eat greens.

Yummy Summery Watermelony Salad
1 watermelon, rinds and seeds removed, cubed
1-2 limes
1-2 tbsp chopped fresh basil
1-2 tbsp crumbled feta
salt and pepper to taste
